Chocolate Chip, Banana/Apple Muffins

1 3/4 cup flour
2 teaspoons baking powder
1/2 teaspoons baking soda
1 1/2 cups mashed bananas (about 3 ripe bananas)
1/2 cup brown sugar
1/3 cup oil
1 egg
1 apple peeled and chopped
a few good handfuls of cup chocolate chips

This is the perfect muffin to make on Fridays. You use up a lot of left over fruit and you have a nice healthy muffin to go with coffee for the weekend. Okay, so I might over do the chocolate chip part, but you don't have to lol... but in our family, they say if you can see "muffin" between the chocolate chips, you haven't used enough.

Set your oven to 350 degrees

Sift the flour, baking powder, and baking soda in a large metal bowl and then add remaining ingredients.

Stir to combine, but don't over do it. It tends to make your muffins tough.

Line your muffin tins with paper liners and then fill each about 2/3 full of muffin batter. Bake about 20 to 25 minutes until nicely browned.
Makes 12.
