Lemon Cupcakes with Chocolate Frosting

Ingredient List
1 cup (250 mL) granulated sugar
4 tsp (18 mL) grated lemon rind
1/2 cup (125 mL) unsalted butter, softened
4 eggs
2 tbsp (25 mL) lemon juice
3/4 cup (175 mL) sifted cake-and-pastry flour
3/4 cup (175 mL) all-purpose flour
1 tsp (5 mL) baking powder
1/4 tsp (1 mL) baking soda
1 pinch salt
1/2 cup (125 mL) milk
Chocolate Icing:
1/2 cup (125 mL) unsalted butter, softened
1-1/4 cups (300 mL) icing sugar
1 pinch salt
2 oz (57 mL ) unsweetened chocolate, melted and cooled
2 tsp (10 mL) hot water

Most of us don't really follow directions when we don't like cooking... wonder if that's part of the problem lol... anyway, if you need or want the instructions, you can find them here...
But the recipe did come from Canadian Living and I haven't found a bad recipe yet, so you just might want to give this recipe a try.  Have you noticed how suddenly there are cupcake recipes EVERYWHERE??
