Betty's Sister's Cheese Ball

This looks to be just the right size for a small gathering. We have had Cheese Balls that are still in the refrigerator come February. Really getting sick of it by then lol...

Hmmm, going to have to think about that one. The first thing that jumps to mind is that if you cook with abandon, you will probably have one really messy kitchen at the end of the day. Don't like that!!

Pepperoni Cheese Ball

Some cheese balls are pretty bland. That’s why this one caught my eye. Certainly nothing bland about this one!

Pepperoni Cheese Ball
12 oz of soften cream cheese
1/3 cup of parmesan cheese
¼ cup miracle whip
1 pk pepperoni slices, chopped finely
¼ tsp oregano
¼ tsp garlic salt

Beat all of the ingredients together and then roll into a ball. Refrigerate for overnight.

Lemon Blueberry muffins

Ingredients

2 eggs, beaten to blend

1/2 cup sugar

3/4 cup vegetable oil

3 tablespoon fresh lemon juice

1 teaspoon grated lemon peel

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon grated nutmeg

1/2 teaspoon ground ginger

1/8 teaspoon salt

3/4 cup fresh blueberries




Directions

Set the oven 350ºF and then fill your muffin tin with liners. Yes, I still use the paper ones.

Beat the eggs and sugar until fluffy and then add the oil, just a tiny bit at a time. Now finish up with the lemon juice and the peel.

So that I don’t make a mess of the island, I usually sift the dry ingredients over a plastic chopping board. Works for me. I just hate a messy kitchen. Once the dry ingredients have been sifted, mix into your batter. Dust the blueberries in a little flour and then fold into your batter. Spoon into your muffin cups and then bake for about 25 minutes. Allow to cool on a wire rack and then serve. Great with coffee in the morning.

I tend to constantly cut down on sugar, so adjust accordingly. My mom and sister are both diabetic, so I'm doing my best to reduce the sugar everywhere I can. Hey, you get used to it lol...

Queen of the Brownies!

Ghirardelli Chocolate Brownie Mix, Double Chocolate, 20-Ounce Boxes (Pack of 12)This stuff is amazing... but we picked up the Triple Chocolate instead. Tastes so much like homemade, no one will ever guess. But a word of warning. I made it for my daughter's birthday. We each had a slice with vanilla ice cream. She said that she doesn't want to see any more brownies until this time next year! It's that rich!!

I was smart lol... I took a sliver with a small scoop of ice cream! I'm good to go for tonight! And oh yes, each packet makes a 9x9 inch pan. We went slightly smaller and made them thicker! With a pack of 12, you will dessert for any family get-together that takes place. You can be the Queen of the Brownies in the neighborhood! No one need know. ;)

Wednesday

Bacon Ranch Potato Salad

3 Pounds Small Red Potatoes
1/2 Cup Mayonnaise
1/4 Cup Ranch Dressing
1 Teaspoon Kosher Salt
1/2 Teaspoon Fresh Cracked Pepper
1/8 Teaspoon Garlic Powder
6 Slices Bacon (cooked crisp and crumbled)
1/2 Cup Celery (chopped)
1/2 Cup Sweet Onion (chopped)
1/4 Cup Red Bell Pepper (chopped)
1/4 Cup Green Bell Pepper
1/4 Cup Wedge (cut black olives)

Directions

Add a little salt to the water and then boil the potato with skins on. I have gotten into so much trouble from my daughter by peeling them! And be sure that the potatoes are cooked to the tender stage.
Drain and set aside.
Chop into uniform pieces… or as close as you can get.
Mix the mayonnaise, ranch dressing and seasonings in a large bowl
Add the potatoes and remaining goodies and then gently toss to coat.
Transfer salad to the fridge overnight so that the flavors meld.

The Coca-Cola Chair

My sister works for Coke and when I saw the story, I simply had to go and take a look. The chair isn't quite what I thought it would look like, but I'm glad that someone is using up those bottles for something!!

I guess I thought that you would actually be able to see the coke bottles... silly me lol...

Sunbeam 5891 2-Pound Programmable BreadmakerJust finished making two loaves of cinnamon raisin bread. I use the bread maker to mix up the dough, take out the finished dough and split it into two smaller loaves to rise. It's saving me a ton. Have you seen how expensive even one loaf of raisin bread is these days??

My niece was just saying how much she would love to buy a bread maker... I'm going to tell her to put it on her Christmas list, seeing that her birthday has already past!

Lemon Cupcakes with Chocolate Frosting

Ingredient List
1 cup (250 mL) granulated sugar
4 tsp (18 mL) grated lemon rind
1/2 cup (125 mL) unsalted butter, softened
4 eggs
2 tbsp (25 mL) lemon juice
3/4 cup (175 mL) sifted cake-and-pastry flour
3/4 cup (175 mL) all-purpose flour
1 tsp (5 mL) baking powder
1/4 tsp (1 mL) baking soda
1 pinch salt
1/2 cup (125 mL) milk
Chocolate Icing:
1/2 cup (125 mL) unsalted butter, softened
1-1/4 cups (300 mL) icing sugar
1 pinch salt
2 oz (57 mL ) unsweetened chocolate, melted and cooled
2 tsp (10 mL) hot water

Most of us don't really follow directions when we don't like cooking... wonder if that's part of the problem lol... anyway, if you need or want the instructions, you can find them here...
But the recipe did come from Canadian Living and I haven't found a bad recipe yet, so you just might want to give this recipe a try.  Have you noticed how suddenly there are cupcake recipes EVERYWHERE??
