Easy Vegetable Dip

MIU Polycarbonate Salad Dressing Shaker2 cups salad dressing
2 tsp ginger
2 T minced onion
2 tsp vinegar
pinch of salt
2 tsp soy sauce
4 T milk
pinch of horseradish... or as much as you want to add
pinch of garlic powder
a few drops of Tabasco sauce... or more. Your choice :)

Mix all of the above together in a bowl and then refrigerate until needed. A nice blend of flavors will perk up the veggie plate quite nicely!!

Beginners Coleslaw

Lipper International Large Cherry Wavy Rim Bowl with Salad Hands½ cabbage

as much celery, carrots and green onion as you want

2 tsp salt

¼ cup oil

1/4 cup vinegar

juice of 1 lemon

salt and pepper to taste



Shred your cabbage (I like mine finely shredded) and then do the same to celery, carrots and green onion.  Sprinkle with 2 tsp of salt to extract the moisture and after “kneading”, squeeze out the juice.



The last step is to mix the remaining ingredients together and drizzle over the slaw.

    Hot Scotch Cocoa

    Had to check out this recipe. I'm freezing here and the only thing I can think of to do is to whip up a mug of hot chocolate and when I saw the name, I just had to see what was special about it! Well, it contains hot milk instead of hot water... like that and then there's the butterscotch schnapps added. It's beginning to sound better and better. Too bad that I don't have any butterscotch schnapps... but I can do something about that soon enough ;)

    Blueberry Jello Salad

    • 1 can (8 ounces) crushed pineapple in juice
    • 2 packages blackberry or black raspberry Jello
    • 3 cups boiling water
    • 1 can (15 ounces) blueberries, drained
    • 8 ounces sour cream (1 cup)
    • 1 package (8 ounces) cream cheese, softened
    • 1/2 cup sugar
    • chopped nuts

    How To :)

    1.Open can of pineapple, drain well, but keep the juice in a small bowl. You will be using it shortly.

    2. Prepare the jello according to directions and then add the pineapple juice in place of the cold water.

    3. Refrigerate until the mixture begins to thicken. Stir in the fruit and then pour into a 8x8 square baking pan.

    4. Return to the refrigerator and chill until firm.

    5. Combine sour cream, cream cheese, and sugar and stir until the mixture is creamy.  Spread over blueberry layer and then sprinkle with chopped nuts.

    I know that it is still Sunday morning, but it is Valentine's Day  and that does mean chocolate! And for some reason every single one of these items is calling my name. I am going to try to hold off until at least lunch, but no promises!

    One Easy Cheese Ball

    Ingredients List
    2 (8 ounce) packages cream cheese
    1 (.7 ounce) package dry Italian-style salad dressing mix
    1 cup chopped nuts

    Philadelphia cream cheese. Photographed and ed...Directions:
    In a large bowl, cream together cream cheese and salad dressing mix. I like to make small cheese balls to set out around the room, so I usually form one ball and then divide it into quarters. This I will then re-shape into four smaller balls. Now roll in chopped nuts and set out with a variety of crackers.

    *Refrigerate cheese balls for several hours or overnight.

    Apple Griddle Cakes

    Ingredients:
    2 large cooking apples, such as Jonathan or Granny Smith, peeled, if desired, and finely chopped
    2 teaspoons lemon juice
    1 1/2 cup whole wheat flour
    2 tablespoons sugar
    2 teaspoons baking powder
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt
    1 slightly beaten egg
    1 1/2 cup milk
    3 tablespoons cooking oil or melted butter
    *Cooking oil for greasing the griddle
    *Unsweetened applesauce can be served in place of syrup but is optional



    Directions:

    *Combine the chopped apples and lemon juice in a medium sized bowl and then set aside.
    *In a second bowl, combine the dry ingredients.
    *In a third bowl, combine the egg, milk and the oil and then add the egg mixture to the second bowl containing the dry ingredients. Do not overmix.
    *Add the apple mixture stirring gently. The batter is going to be lumpy, but don't worry about it.
    *Grease the griddle or frying pan lightly and then place over medium heat until a few drops of water bounce on the surface.
    *Measure out the batter. Each griddle cake should be about 1/4 cup.
    *Each griddle cake will cook for about 2 minutes. Flip and cook the next side. If sticking begins to occur, add a little more oil and continue until all of the griddle cakes are ready to serve.

    Interesting Facts About Pancakes

    *In Newfoundland, tiny items are added to the batter (just before lent) for fortune telling purposes.

    *In 1999, 40,000 people were served pancakes as part of a pancake breakfast! I wonder just how many pancakes that would have added up to?? If three pancakes were prepared for each person, that would be somewhere around 120,000 pancakes! And then you can't help but wonder just how much syrup would have been needed!
