Salty Peanut Bars

Peanuts in Shell, Washington, USA

1 yellow cake mix
1/3 cup margarine
1 egg
3 cups miniature marshmallows

Heat oven to 350 (moderate).
Combine the margarine, the egg and the cake mix in a large bowl and beat with hand mixer until you have a crumbly mixture. Press into a 13x9 inch pan that has been ungreased.

Bake for about 15 minutes. Layer should be a nice golden brown. Remove from oven and sprinkle with the marshmallows. Pop pan back into the oven until the marshmallows begin to swell. This should take a couple of minutes at the most.

Topping
2/3 cup of corn syrup
¼ cup of margarine
2 tsp vanilla
1 cup of peanut butter chips
2 cups of rice cereal
2 cups of salty peanuts

In a saucepan, combine the syrup, margarine, vanilla and peanut butter chips. Over medium heat, stir until the chips have melted and the mixture is smooth and syrupy. Remove from the heat source and stir in the rice cereal and the peanuts. The last step is to spoon the topping over the bottom layer and spread to cover the entire pan. Place in the refrigerator to cool and then cut into bars when the bars are solid.
