Experimenting With Flour

Just because you have run out of plain white flour, don't despair. You can use different kinds of flour that might be sitting in your pantry. Have you ever strolled through a bulk food store? You will be amazed at how many different versions there are. Darling daughter and I just picked up some BREAD FLOUR (which I really didn't know a thing about.) Apparently she was watching a cooking show and said BREAD FLOUR makes really chewy cookies. She made some on Friday and we have some pretty amazing chocolate chip cookies sitting in our cookie jar at the moment.

**Each flour will affect the end result however so read up on the varieties and what they can do.

Super Easy Potato Bread for the Bread Maker

I really think that the breadmaker was designed just for people like me... those who really don't like to cook! And this particular recipe makes for great toast... something I have managed to master. ;)

1 1/4 cups water
2 tablespoons vegetable oil
3 1/4 cups flour
1/2 cup potato flakes
1 tablespoon sugar
1 1/2 teaspoon salt
2 3/4 teaspoons yeast

Follow the order of the above ingredients and place in bread maker. Use the "dough" cycle and check periodically to make sure that the flour has all been incorporated. Remove at end of dough cycle and allow to rise for a couple of hours. Bake at 375/400 degrees for 30 mins. It all depends on your oven.

*I find that you use a lot less energy when you bake it in the oven. Doesn't take half the amount of time if you remove it from the bread maker.

Valentine's Day Strawberry Shortcake For Those Who Hate To Cook

Even though it's February and Strawberry Shortcake is often thought of as a summer dessert, I thought that it would be nice for Valentine's Day... hey it's red and white! And it's super easy. You are starting off with refrigerated bicuits and then layer on the strawberries. Top it off with a big dollop of whipping cream and you are done. And this just has to be THE BEST DESSERT. I would even choose strawberry shortcake over brownies if you can believe it!

Here are the ingredients:

1 can (10.2 oz) refrigerated buttermilk biscuits (5 biscuits)

Strawberry Mixture
1-1/2 pints (3 cups) fresh strawberries, sliced
If you like the juices to flow, add a bit of sugar to the berries.

Whipped Cream
1/2 cup whipping cream or if you are in a rush, just grab a can! Works for me ;)

Dessert that you can whip up in minutes and perfect for those of us who can't remember where the kitchen is half the time. It's not my fault. My husband says that he is a better cook than me, so I just let him go on thinking that. Can't remember the last time I cooked an entire meal.

The arrangement works for us. I just get to wash up! ;)

Now I like the sound of that! Throw everything into the slow cooker in the morning, relax and dinner is ready when you need it to be.

I was just thinking about my dad today and the fact that he positively loved fudge and he passed along that love of the stuff to me. It's funny when you think about all of the foods that you love and how you came to love it. Make a list sometime today... it will boggle your mind.

Claim Jumper

If you get a chance to dine at Claim Jumper, do it. We are in Chicago at the moment on business and quite by accident, that's where we had dinner last night. The Whiskey Chicken was awesome and so was the English Toffee Pudding and the Brownie Overload that my husband and daughter shared. Actually, it is so big that most of it is sitting in our fridge here at the hotel. Daughter and I had some with coffee this afternoon, but it doesn't look as if we even made a dent in it!

In Search of the Perfect Measuring Cups

Okay, I'm sitting in a hotel room and I'm thinking about lunch and the fact that the hotel provides a kitchen but not a measuring cup. We are going to try to wing it (darling daughter and myself) so we will either end up with very watery soup or soup that will take paint off the walls. So, with that in mind I went over to Amazon to see how many different kinds of measuring cups they have over there. I'm warning you now lol... some are dirt cheap and others, well lets just say that I don't cook often enough to be able to justify them. But they would look awfully cool in my kitchen.

Sitting in Chicago


Which might sound quite impressive, but after spending the past 5 weeks in Florida , leaving the Florida sunshine behind is big time hard! I suddenly don't know how people can stand it and believe it or not, it's just too cold to go out for lunch. The hotel where we are staying has a little kitchen with a stove, microwave and fridge and we do have some food left over from Florida so we are basically going to wing it. We have a pouch of soup left but it's the water part that we are going to have to wing. There is no measuring up to use. We do have a bottle of water that we can try to eye and then hope for the best. Anything to prevent us from having to go out in the frigid weather.

And not realizing that we would be coming to Chicago, we didn't bring a winter coat with us. That is one thing that we will be checking out when we hit the mall. The sales in Florida were unbelieveable... just maybe we will be able to pick up some winter gear too. But now... we need a measuring up!

Yes, those are very cool measuring cups, but I'm not Paula Deen so just a plain old simple one will do quite nicely. ;) But these would look awfully nice sitting on my counter!
