Coconut Oatmeal Cookies

1/2 cup milk
1/2 cup butter
6 T cocoa
2 cups sugar
3 cups oatmeal
1 cup coconut
1 tsp vanilla

*Combine first four ingredients, place in double boiler and boil for 2 minutes. Remove from heat and add remaining ingredients.
*Drop from tablespoon onto a buttered cookie sheet.

No Bake Peanut Butter Cookies

1/4 cup butter
3 cups sugar
4 T cocoa
1/2 cup of milk
1/2 cup peanut butter
3 cups rolled oats



Combine the first four ingredients in a saucepan and cook for about 5 minutes over high heat. You want to make sure that the sugar is well dissolved. Remove from heat and add remaining ingredients. Thats it. Stir to work the oatmeal into the syrup and then drop by spoonfuls onto wax paper. Allow to cool.

My mom has been making them for years and they never lasted very long around our house when I was a kid or in my house now with my two. It's a great recipe for when you need dessert quick and you don't have any fancy ingredients lol...

Oven Toasted Pumpkin Seeds

Pumpkin seeds
olive oil,
seasoned salt

*Rinse pumpkin seeds and here's the yucky part... you are going to have to use your fingers to remove the slimy stuff.
*Rinse again and then drain.
*Spread out on a cookie sheet lined with paper towel to dry. I usually leave them in the oven over night.
*Remove tray from oven
*Set oven to 250 degrees F.
*Toss seeds in a little olive oil and then sprinkle with seasoned salt.
*Bake for about an hour, giving then a stir ever 15 minutes or so.
*Remove from oven and allow to cool. They can be stored in an airtight container for about 3 months... if they last that long!
