More on my microwave...

Speaking of microwaves... see Jan 18,  when they first arrived on the scene everyone was using them for EVERYTHING.  I even remember going out and buying a cookbook with recipes for just about everything you could imagine. I don't think that I have opened that cookbook in years. Now we pretty much use it for heating things up and making popcorn.


My Day So Far... Time to do some snow shoveling and then I think that I will peruse an old cookbook for some new recipes to try this week. I hate using the same recipes over and over again!!

Couldn't hold out...

 Hubby came home with a microwave from Costco yesterday and it was cheaper than the last one we bought for the previous house. Luckily, one came with this house when we bought it and it lasted nearly two years. Have no idea how old it was when we arrived... but the price this time around was really good. And yes, we have already used it!

No Microwave... Now What??

Our microwave blew up yesterday.. our kitchen still smells horrible! Other than that, it's  amazing how much you come to rely on it!  To think that we grew up, not even knowing what one was!  Not sure how long before we will be heading to the city to buy another one.  I don't think that we will last a weed!

Easy Chicken Pot Pies Using Biscuits From A Can

                         


 Muffin tins would work, but I kind of like these!  They are just pretty and work perfectly for... chicken pot pies using dough that comes out of a can...  The filling is the easy part... it's the crust that I hate making... And how cute would they be when you present them at the table!!!

This Looks Pretty Easy

CHILLED WILD RICE SALAD

1/2 cup wild rice, uncooked
2 cups water
1/2 teaspoon salt
2 medium-size tomatoes, diced
1 large jalapeno chile, diced
1 green bell pepper, diced
1/2 cup scallions, chopped
1/2 cup shredded any cheese you might have on hand...
1/2 cup shredded sharp Cheddar cheese
*1/4 cup fresh cilantro, minced
* Cilantro sprigs to garnish


In a heavy medium-size saucepan, place rice, water, and
salt. Bring the rice to a boil. Reduce heat, cover, and
simmer 45 minutes. Drain the rice and return to heat to
dry, stir with a fork. In a large salad bowl, you combine
the rice, tomatoes, chile, bell pepper, scallions, cheese
and minced cilantro. Our daughter hates cilantro, so we have to leave it out. :(
Cover and refrigerate until chilled.

Who Is Up For Chocolate Cake??

 I went looking to see what January is famous for. I wasn’t sure what I would find, but I turned up this page that had something fun to do almost every single day.  One was chocolate cake day. I don’t know if any of them are real, but who cares. I don’t think that the family would care if it meant chocolate cake for dessert!

My January Calendar

 I started something new this year. I am writing down every dinner that is served at our table. There are always days when I don't feel like cooking... like most days and I can't think of a thing that is even vaguely interesting! Having a calendar page full of ideas really helps!
